UMBC Eats Community Cookbook Recipe of the Week

Artichoke and Onion Appetizer

Ingredients:
1 can artichoke hearts (drained and chopped)
1 medium onion (chopped)
2 cloves garlic (minced)
4 eggs
1 cup shredded cheese (cheddar or hot pepper)
½ cup bread crumbs
2 tbsp. parsley
2 tbsp. basil
1 tbsp. oregano
½ tsp. salt
½ tsp. black pepper
½ tsp. cayenne pepper (optional)

Add artichoke, onion, and garlic in pan and cook with a little olive oil until onion is cooked. Blend eggs, cheese, bread crumbs, and spices in a mixing bowl. Combine all ingredients and place mixture in an 8x8 greased pan and cook at 350°F for 30 minutes. Cut into 2-inch squares. Enjoy!
