UMBC Eats Community Cookbook Recipe of the Week

Quick Quinoa Salad

Ingredients:
1 head romaine lettuce
Quinoa
Cherry tomatoes, halved
1 Avocado, sliced
Hard boiled eggs

Wash and cut the romaine lettuce and put in a bowl. Add cooked quinoa (amount can be adjusted). Add cherry tomatoes, sliced avocado, and eggs. Adjust ingredient portions to your liking.
