UMBC Eats Community Cookbook Recipe of the Week

Crockpot No-Bean Chili

Ingredients:
2 cups chicken broth
1 cup quinoa
2 sweet potatoes, peeled and diced
1 cup carrots, chopped
3 fresh tomatoes, chopped
1/2 can of corn
1 small can tomato sauce
1 can tomato paste
1 pack ground turkey, cooked (can be substituted or omitted)
Seasoning


Cook the ground meat in a skillet over medium high heat. Combine all ingredients in a crockpot and set on high for 4 hours (or low for longer) until the sweet potatoes are soft.
